Gauthier started as a vigneron in 2016 under the name Serres de Merly — Saharnaz joined in 2021 and they renamed to Meïgoon. 4 hectares in organic farming, no additives, no sulphites. About Meigoon
Gauthier Ollivier grew up in Paris but found his place in Languedoc. He studied in Montpellier and found his land in Berlou near Saint-Chinian in 2015. The first harvest came in 2016 under the name Serres de Merly. In 2021 Saharnaz Ahangi joined the project and they created Meïgoon together. They are now based in Hameau d'Escagnès in Roquebrun with 4 hectares of organically farmed vineyard planted with Cinsault, Grenache Noir, Grenache Blanc, Carignan and Syrah. The approach is strictly natural: no additives, no filtration, no cooling, indigenous yeasts only. Gauthier experiments with vinification — short and long maceration, elevage under flor, pét nat — but with a consistent goal: that the wines should taste of the place and not of the process.
