Cinsault and red Vermentino from Saint-Chinian — carbonic maceration, 10 months in oak.

Ugo Lestelle works a handful of hectares in Saint-Chinian in Languedoc, farming organically on clay and limestone with minimal intervention. Point is his most accessible wine — an atypical blend of Cinsault and red Vermentino, two grapes that don't often end up in the same bottle. The Cinsault is aged for 10 months in oak barrels, the Vermentino in tank, then blended. Carbonic maceration keeps it fresh and light on its feet.
